Will it be possible to install other sensors in the Beta or Gamma version?

This one looks very promising: http://www.fairchildimaging.com/catalog/focal-plane-arrays/scmos/ltn4625a
It is similar or maybe even identical to the sensor used in the new Blackmagic Ursa.
Most interesting is its exposure latitude and the ability to be switched from rolling to global shutter.
(Rolling shutter gives you more latitude.) Other sensors might look outdated if these specs are reliable.
Exposure latitude is the key to good cinematography.

It is still amazing how fast the sensor development is moving on.

The Ltn4625a is excellent but it might be difficult to get as BlackMagic said they paid for its development (probably an exclusivity).

You may also want to consider the IMX255 (4K) or IMX253 (12 Mp). Both are global shutters (Sony Pregius) with very low noise imaging. They should come out mid to late 2016.

Sony sensors were for a long time impossible to acquire as normal human being, have things changed?

Well it seems that indeed things have changed as dealers seem to be able to sell small quantities: you may check with Framos.
